Plata Coffee was founded by Aaron and Rose with a simple goal: to create a welcoming place where people can connect, share ideas, and grow together.
Over the past three years, they have immersed themselves in the coffee industry, learning how a thoughtfully made cup can bring neighbors together and strengthen the community around them. Outside the shop, Aaron works as an architect specializing in sustainable design, while Rose is a nurse. Behind the scenes, they both do whatever it takes to keep Plata running smoothly.
Small business ownership is rarely predictable, but Aaron and Rose embrace every challenge. They are proud to support their talented baristas, partner with local roasters, and create an environment where everyone feels welcome, whether they are a regular or simply passing through.

Meet Amanda Turpin, Plata Coffee’s manager, espresso high priestess, and resident mad scientist. With 17 years of experience across New Mexico’s coffee industry, Amanda has worked as a barista, wholesale supplier, coffee educator, and independent café consultant.
Each role has deepened her appreciation for the craft of coffee and the people behind every cup, from those who cultivate and source it to those who roast, brew, and serve it. At Plata, she especially enjoys curating the guest roaster program and introducing customers to exceptional coffees from local roasters.
More than anything, Amanda loves helping curious coffee drinkers build the skills and confidence to brew a better cup while encouraging more thoughtful and ethical sourcing practices.
